Citrus Muffins

Citrus MuffinsDo you find lunch the hardest meal of the day? Dinner is always planned here, so that is easy peasy. Breakfast we always have an assortment of decisions. Cereal, toast, oatmeal reign at this house. Easy, and the kids can generally make it themselves. Lunch. lunch is a hard one. It is usually leftovers, and I do like to cook extra at dinner to insure this, especially for hubby so he has something to take in his lunch. If we don’t have leftovers it is usually me standing in front of the pantry wondering what to make. Unplanned lunch, so hard sometimes. When I do plan lunch and grocery shop accordingly it is a wonderful thing. My favorite of all favorite lunches is soup and a muffin. A combo that in my mind can’t be beat. Well, okay I will admit, that maybe, just maybe chocolate and peanut butter could beat it, but let’s be honest nobody is eating that for lunch around here. So on Thursday lunch was split pea soup and these delicious muffins. I realize in the picture they don’t look all that mesmerizing, but let me tell you they were darn good!

Recipe adapted from Betty Crocker

  • 3 Tbsp. sugar
  • 1 tsp. grated orange peel, divided
  • 1 tsp. grated lemon peel, divided
  • 1 tsp. grated lime peel, divided
  • 2/3 cup milk
  • 1/3 cup vegetable oil
  • 1 egg
  • 1 2/3 cup all-purpose flour
  • 3/4 cup sugar
  • 2 tsp. baking powder
  • 1/2 tsp. salt

1. In small bowl combine 3 Tbsp. sugar with 1/2 tsp. of the orange peel and 1/4 tsp. each lemon and lime peel.

2. Grease 12 muffin tins and pre heat oven to 400 degrees.

3. Mix together milk , vegetable oil and egg in mixing bowl. Add flour, sugar, baking powder, salt, remaining 1/2 tsp. orange peel and 3/4 tsp. each lemon and lime peel. Stir until just combined. Scoop into prepared muffin tins.

4. Top with sugar and citrus mix.

5. Bake for 18 minutes. Cool for 5 minutes, remove and serve warm.

6. Eat and enjoy!
